If you're just visting then look for any of the "parilla" restaurants in the city. There are some on the strip in Recoleta but in my opinion some of the best ones are scattered around in the working class neighbourhoods of the city and they'll cost you much less too.

If you see a restaurant with something like "parilla" or "asado" above the entrance then if it's full of people you'll know you've found a good one.

More a more authentic asado you'll probably have to go outside of the city unless you have some Argentine contacts.

If you don't mind taking a taxi away from the city centre then Lo de Charly is worth a visit.
I'm told that it's open and serving asado around the clock!

Prices there are much cheaper than at the parrillas in touristy locations. When I went there recently, one serving of vacío (flank steak) cost just $12 pesos (US$4) and consisted of 2 large steaks.
